The Fusion Classic 8″ Kiritsuke is an excellent all-purpose Japanese knife that can be used like a Gyutoh (chef’s knife) for the preparation of boneless meats and vegetables, and the angled tip makes for simple slicing, just like the Yanagiba (slicing knife). The blade features a hollow ground edge that helps starchier and sticker foods slide from the blade. Traditionally, the Kiritsuke was a status symbol reserved for use by executive chefs, and the sharp German-steel blade and durable ABS handle will make you feel like a professional in no time.
The Fusion Classic line embodies control, quality, and long-lasting dependability. Featuring a German-steel blade of X50CrMoV15 steel, each blade offers excellent edge retention and stain-resistance. The modified bolster is angled to encourage a proper pinch grip on the knife, giving the user mastery over their blade. Designed with an angle bolster for ease of sharpening, the whole blade can be used from tip to heel. An ergonomic, triple-riveted ABS handle encases each knife’s full tang, giving the Fusion Classic substantial strength and heft. The ABS handle is dishwasher safe, but hand-washing is recommended.
